Vin Santo is the expression of the typical Tuscan passito wine. The Trebbiano, Malvasia and San Colombano grapes are selected in the field and harvested late. After a period of withering, the must is left to ferment for a minimum period of 4 years in small oak, cherry or chestnut caratelli. Then the wine is bottled and refined in a lying bottle for about 6 months.
